Due to its importance and c omplexity\,\nextensive studies relating to the impact of thermal processin g\nfactors and heating modes on bread have been conducted. None of\nthese studies\, however\, focused on humidified baking of bread. This\npresentat ion focuses on the effect of humidified baking on bread\nproperties.
